Hi Jason,
I was in Ireland last year.. beautiful country.. but really cold in summer too.. I went to a beach (in Sherkin Island - West Cork) but can't swim but there was plenty of sun.. so.. sunbathing and sunburning! alas!

potatoes only count if you boil them beyone recognition and then complain they are bland! ;-)

Doesn't seem like there's many other Irish folk around, the closest I can come to it is living in Wales - just across the water.

Welcome to the forums. I am of Irish heritage. I have never been to Ireland, I hope to someday visit the country. I hear it is beautiful.
