I thought that since there are more and more people who are talking about fitness, perhaps this would be a good place to post recipes. Others could try them and maybe even modify them to provide alternate versions for variety.
I want to start it off with one:
Quick, healthy salmon soup.
1 can favorite organic low sodium beans. (Westbrae has quite a few good ones, however Kroger has just added some under their Private Selection label that I have not tried yet.)
1 can of diced rutabagas
1 can of cut spinach
1 single serving pouch of chicken of the sea pink salmon
Salsa for taste.
Combine all of the ingredients in a medium sized pot. Stir and mix well.
Bring to a boil.
Lower heat and simmer for four minutes.
The beans have a calorie count of 350, the Rutabagers of a little less than 125, and the spinach about the same amount. The salmon has a calorie count of 90. The salsa probably 100 or less. This totals 665 calories.
This is enough for two people to split. Adding some flat breads, and it is a great, quick, healthy meal.
For desert, favorite fresh fruit.

Actually this is a re-start of an older thread(s) as are quite few topics, Fuzzy Nuts. It is a good one though.
I take a halibut filet steak myself and sear it with olive oil and fresh dill then drizzle a roasted sesame sauce over it and serve over jasmine rice with manderan oranges. Topped off with a blend of black, white, green and red peppers - coarse ground of course.
As an accompaniment to the entree I have a lite green-leaf salad with pecans, raisins, a sprinkle of a "white" cheese and a vinegret dressing along with a medley of steamed vegetables usually consisting of green peas, carrots and squash.
For the appetizer I normally serve a tomato wedge - chilled with cucumbers and generously covered with pepper -still coarse ground.
For the ending I like to serve either an apple and walnut medley or a pear with chedder cheese and raisin topping.
All served with water and hot tea.
For Dinner parties that is my usual menu though the main dish can be substituted by another fish, chicken, turkey and occasionally beef and pork depending on how much time I want to spend cooking and how many are coming over for dinner.
Spur-of-the-moment to-dos are another ballgame - it's whatever is fastest - usually BBQ or Burgers or heaven forbid pizza. http://oakhurstonline.com/icon/laugh.gif
I never use neither salt nor onion in anything and all my guest love my meals and almost fight to come back to the next dinner party ... some I guess don't realize they are eating healthy and want more.

nacktman, that sounds delicious!
My quick and healthy meal is salmon spagetti. I cube a couple salmon filets and sear in garlic and olive oil. Throw in a jar of marinara and simmer until the salmon just begins to flake. Serve over vermicelli. Not quite as healthy as some other dishes, but it sure beats hamburger.

I will try a variation on your recipe. I am lactose intollerant but it sounds great even without the dairy.
P.S. Here in Georgia, it will have to be iced tea.
TheNorm, that sounds great. I am going to try that over some Oat Groats instead of the noodles.

Here is a very healthy breakfast that is filling and most tasty.
Take a banana, peel it
Slice it up in a bowl or just mush it up, however you want to
Then add some chopped cashews
Very good! Quick and easy

I would be sick before long if I ate this, so for me it would not be even slightly healthy. I am allergic to both ingredients.

pretty good post here. when i make chili instead of using ground meat i use ground white turkey. add the usual ingredients and tastes delicious!

A friend of mine clued me into "Bare Naked" granola
I eat it with yogurt when I really don't need a full meal.......Great stuff!
(I still have the salty "no good" snacks reserved for the upcoming football season but I'm betting the healthy stuff will counter that, lol)

Garden of Eatin' has a line of chips that are salty, flavorful, and healthy.
Publix Supermarkets even has a Greenwise version of corn chips that is healthy. However, read all of the Publix Greenwise labels carefully since some of them show a lot of sugar and are therefore not healthy.

I make a batch of "breakfast bowls" and take them to work, since I have a long commute and no time to eat breakfast before I leave home.
For a batch of 6:
1 carton of southwest or cheese and chive egg beaters. 2 large eggs. 12 strips turkey bacon. 2 large broccoli crowns. 3/4 cup olive oil. 2 packets of heat and serve brown rice. 12 small corn tortillas, 6 slices of your favorite cheese.
Wisk the eggbeaters and eggs in with the olive oil. Shave the broccoli tips off the crowns and mix in. Scramble the mixture in a large skillet.
Cook the rice and fold into the cooked eggs. Place a corn tortilla in the bottom of a tupperware container (sandwhich size works well), put a slice of spicy jack or cheddar cheese on it and top with another tortilla. Scoop the rice and egg on top of the tortillas, and top that with two slices of cooked turkey bacon. Salt and pepper to taste. Makes 6 bowls. Freezes extremely well, and heats up in the microwave in about 4 minutes. About 600 calories with less than 10 grams of fat, mostly from the olive oil.

I have a granola that I make:
3 Cups rolled oats
1/2 C whole wheat flour
1 tsp cinnamon
1/2 C chopped walnuts
Combine the above in a large bowl
1/2 C maple syrup
1/3 C canola oil
1 tsp vanilla
Beat together with a whisk. Combine the liquids with the oat mixture
Spread on a cookie sheet. Bake for 30 minutes at 300 degrees.
Remove from oven and break up clumps with a spatula and add
1 C raisins
Put back in oven and bake an additional 20 minutes.
I store this in the refrigerator in a sealed container.
I usually eat this with sliced fruits, plain yoghurt and milk.

Sweet Potato Soufflés;
8 lbs. Of sweet potatoes
Powdered cinnamon to taste
Powdered nutmeg to taste
Using a vegetable peeler, peel the sweet potatoes.
Cut the sweet potatoes and place them in an oven safe pan.
Pre-heat the oven to 352 degrees Fahrenheit. (I apologize for not know the Celsius equivalent.)
Bake for 90 minutes. (If the potatoes are not absolutely soft and there is no liquid, bake for longer. Sometimes, I have baked for up to 120 minutes.)
Use a potato masher and mash the potatoes. (The liquid is from the potatoes.) The potatoes should be very soft and the liquid will sweeten the potatoes.
Add ground cinnamon to taste.
Add a little ground nutmeg.
Mix the potatoes and the seasonings.
You can make this in advance and then reheat it to serve it. It is absolutely delicious and you will not want any sweetener. When one bakes the sweet potatoes until they are this soft, they become very sweet.

Never thought about mashed sweet potatos. Sounds easy enough. Throw in a few spices to kick them up. Many thanks. Will give it a try. Lots of vitamin A, a great antioxidant.

pork and sauercraut? You bet! It's a traditional Pennsylvania Dutch good luck favorite.
4 smoked pork chops, Canadian bacon works too
l pound of sauercraut
half of the sauercraut goes in the bottom of your crock pot or regular pot
lay chops on sauercraut
add remaining sauercraut
Cook in your crock pot for most of the day or regular pot for several hours. When using a regular pot, check for water content and add hot water when needed.
hint:) The longer you cook the sauercraut, the less gas you'll get after you've eaten this meal.
Mashed potatos go well with this combo; can even drain some of the sauercraut and mix with the mashed. Enjoy!

The apples have been very good around here.
We have a Jewish holiday this coming Wednesday night. It is Sukkoth.
We are planning on a simple dish of baked apples and using harveym's recipe for granola as a topping.
P.S. Boreas, the trick is the slow baking. The sweet potatoes will be very soft and there will be liquid from the sweet potatoes. (When it is over night in the refrigerator, some of the liquid will be reabsorbed into the sweet potatoes.)
When I took a pan to my parents I wrapped the aluminum foil covered aluminum pan in a thick towel and put it on the floor of my truck. This way, there would be less likelihood of spilling and a mess.
P.S. This recipe is good for people with cholesterol issues and good for most diabetics.

When i lost weight many moons ago
I would usually have light breakfast, light lunch then normal dinner.
Inbetween breakfast and lunch i would go for a power walk, or jog. Really works

Your recipe for granola is terrific. Your recipe's lack of sugar and white flour makes it even better.
My wife varied it once. She substituted chocolage chips for the walnuts and simply baked it for 30 minutes.
We used the granola for toppings for non-dairy ice cream.

First time I'm on in a few days. Glad to hear that you liked the granola. Actually I adapted it from a cancer cookbook put out by the Association for Cancer Research. I noticed from another of your postings that you are lactose intolerant. Here is a great tasting cake recipe you might like that I found years ago in a Japanese cookbook (don't remember which one).
Tofu Apple Cake
2 C sifted white flour ½ t salt
1 ½ t baking soda 1 t vanilla extract
1 egg 1 8 oz. Cake tofu, mashed
½ C vegetable oil ½ C chopped walnuts
¾ C brown sugar 1 C peeled chopped apple
1 ½ t cinnamon ½ C raisins
Preheat oven to 350 degrees.
Sift together flour and baking soda.
In a bowl, combine egg, oil, sugar, cinnamon, salt and vanilla. Beat with an electric mixer until smooth. Add tofu and mix until just blended. Fold in flour mixture and toss gently. Add walnuts, apple and raisins.
Pour into a 9” cake pan and bake for 30 minutes or until a toothpick inserted in center comes out clean. Cool on rack and turn onto a plate.
Note: The batter is almost as thick as a dough and may have to be pressed into the pan. I normally use a teflon or lightly greased pan. This may not be necessary, but I have not had the cake stick so why argue with success.

Thanks for the recipe;
My wife was recently treated for breast cancer. It was an estrogen positive tumor. This is good because they are the most receptive to all of the treatments. Unfortunately, she avoids soy.
However, I am going to make that cake any way for me and the kids.
I will let you know how it is.
Try the sweet potatoe souffle and let me know how you like it.

The sweet potato recipe is similar to the way I make them, but I use very little nutmeg and sometimes I add some powdered ginger. If you don't tell your wife that there is soy in the cake I bet she won't even know.
My wife is fighting colon cancer and in addition to the chemo we are trying to eat a healthy diet. There are a number of cancer organizations that publish recipes aimed at people with cancer. A lot of the recipes are pretty good and healthy even if you do not have cancer. The National Cancer Institute has a web site where you can find recipe books along with their other guides.

I hope and pray that your wife will also be cured.
My wife found accupuncture to be a help. It helped her with the side effects of the chemotherapy. Three days after a chemotherapy treatment, she would go for accupuncture.
The accupuncturist she used was also a surgeon in Shanghai. He was affiliated with a hospital here in Savannah.
If you are interested, and will PM me with where you are, I will ask him if he can recommend someone in your area.
P.S. I have tried ginger and loved it. However, my kids did not.
